Winter Season Update
Though our growing season has come to an end, we have lots going on this winter season! We’ll be seeing you at a number of Local Winter Markets (read on for dates and locations) where we’ll be selling our ciders by the glass and bottle As well, discover ways to give the gift of 1818 Farm and Cidery this Christmas!
It’s Cider Season!
The vegetable garden has been put to rest but there is still lots of work going on at 1818 Farm and Cidery! We have our 2025 cider in full production, we have our new 1818 Farm and Cidery building under construction, and we still have many Local Winter Markets to attend! Read on for all of the details.
Cider News
Cider production is in full swing! We have new and exiting ciders to be released next year alongside some familiar favorites.
News additions include a Tequila barrel-aged pear and apple cider and a 100% golden russet cider aged in Brandy barrels.
All Together will be back using apples from our community, and Hop Garden gets a new twist with the incorporation of sea buckthorn and a new hop blend.

We have rented a red container store right in the Byward Market this winter where we’ll be serving hot mulled cider, cider by the glass, as well as selling our collection of bottled cider for you to bring home and enjoy through the season.

What’s Happening
on the Farm
Fall vegetables are more unique, intense, and nutritious as they have the longest time in the ground pulling up more nutrition and flavour than the quick growing summer vegetables.
Making a return to the farm are spinach, arugula, baby kale, salad turnips, radishes and carrots.
New fall vegetables you can expect are cabbage, savoy cabbage, broccoli, radicchio, rutabaga, assortment of winter squash, pumpkins, celery, celeriac and turnip.
Vegetables coming to an end in the next few weeks are tomatoes, cucumbers and our flower program.
Vegetables staying with us are our spring mix, bell peppers, kale, swiss chard, onions, garlic, beets, parsley, and zucchini.

1818 Farm and Cidery Construction
We have started construction this week on the 1818 Farm and Cidery building. It will be a three season building that will house the cidery production area, the farm store, a kitchen, bar area and open seating. We see this building as a place where we can continue showcasing 1818 Cider and organically grown vegetables while providing a space for our community to come together. The food served will be fresh, local and simple in it’s approach.

First up, you may recognize our cider on the cover of Edible Ottawa magazine! The physical copy is out now — so be sure to keep your eyes open for a copy when you’re out and about! The digital publication will be on their website soon.
Canada Summer Jobs
Second, we recently enjoyed having the Canada Summer Jobs team at the farm to film a video sharing about the Summer Jobs Program, which provides wage subsidies to employers to create quality summer work experiences for young people aged 15 to 30 years! We have started harvesting wild apples in the surrounding area of Carp and Corkery. We have access to over 300 wild apple trees which we feel very grateful for. Harvesting can be challenging but we think Wes (our cidermaker) thrives during this process!
Our five ciders are still available and are for sale online (with free delivery in Ottawa with a 6 bottle minimum). We also sell them at the markets in Carp, Westboro, Barrhaven and on some weekends in Lansdowne and Manotick. Of course they are for sale at our Farmstand where you can order by the glass as well.
Featured Recipe:
Need some inspiration to get creative with your 1818 produce? Why not add a new flavourful and nutritious soup to your arsenal!
Celeriac and Rutabaga Soup
Serves 2-3
Ingredients:
2 ½ tablespoons butter
1 celeriac, peeled and chopped
1 rutabaga, peeled and chopped
2 cloves garlic, peeled and chopped
2 swiss chard stalks, stems removed
2 ¼ cups broth (chicken or vegetable)
¼ cup milk or heavy cream
salt/pepper
Instructions:
In a large pot melt butter over medium heat. Add celeriac, rutabaga, garlic, and onion. Cook for 10 minutes stirring occasionally until beginning to soften.
Add broth and bring to a boil. Cover and reduce heat to low. Let simmer for 20-25 minutes until vegetables are tender.
Use a blender to puree soup until smooth. Stir in the cream. Salt and pepper to taste.
Slice swiss chard leaves and saute in butter until wilted. Use these to top the soup just before serving.

Our Spring season has wrapped up and now move forward into an exciting time in the farm, Summer time! The volume of vegetables that will be popping up throughout the farm will be bountiful and we are excited to share the reward with our Summer Abundance Harvest Box members and those stopping by the stand or markets.
Field Romas tomatoes, hot and bell peppers, zucchini, cabbage, herbs, greens, onions, and garlic are just a few of the highlights of what is to come throughout the summer season.
We will also have beautiful cut flowers to purchase or swap out at your next harvest box pick up.
We just love summer! 🙂

Since our last newsletter we’ve launched two new ciders! And although we love them all, these two have been a massive hit for the summer time. If you haven't met them yet, allow us to introduce you:
Hop Garden
A hoped cider using Simcoe, Mosiac and Citra this cider was finished with organically grown ginger to give a smooth, refreshing, crushable taste. Hop Garden finished with the slightest touch of sweetness and 100% goodness.
Last Call Volume Two
Since you couldn't get enough of Volume One, we went ahead and made a Volume Two! This one is a bit different though... Volume Two is a bourbon barrel aged crabapple cider aged on cherries. This cider is still, so no carbonation, and is perfect for those who like things a bit sour or love getting creative with mixing cocktails. Find a recipe used for Canada Day below.
Cider Cocktail Recipe
We know our ciders are as good as they get on their own, but sometimes it’s fun to get a little creative! Check out this recipe for a cocktail our cidermaker Wes enjoyed making this past Canada Day. It’s sure to be a hit all year round, eh!
The “Oh Canada”
Ingredients:
5 oz Last Call Volume Two
0.5 oz Canadian maple syrup
Topped soda
Instructions:
Fill a glass halfway with ice
Add 0.5 oz maple syrup
Add 4 oz Last Call Volume Two
Give a good stir to mix in maple syrup
Top with Soda
Garnish with fresh mint, cherries, or anything you like!

What’s Happening
on the Farm
Our season took off this year to a great start and even through some cold nights our plantings inside and out have thrived! We are excited to be offering the freshest ingredients to kick off your local vegetable season. We have some returning stars that you know and love but will be showcasing some new exciting items for this time of season!
We have beautiful red and green stemmed spinach being harvested as we speak and asparagus has poked it's head out to see what's happening in the farm. Inside our spacious green house our tomatoes are being nurtured and we are excited to have them soon. We planted carrots and beets in the greenhouse so you can have them even earlier, A big thank you to Karl for that one!
As we continue to seed and plant we will update you on all the new and exciting things happening!

New inCider Info!
Well it's been a long time coming but we can officially announce our launch date for our cider at the farmstand! With much love and even more patience we have curated 5 unique ciders for you to enjoy throughout the 2024 season. These ciders are dry, intense in flavour and best served chilled, with friends and your favorites dishes. They are built to age, meant to be sipped and guaranteed to be enjoyed.
Paradise Road
A Chardonnay inspired cider with flavour profiles reminiscent to toasted vanilla, apple pie and a soft rich mouthfeel. We have lightly carbonated this cider to provide the right balance of flavour and texture.
All Together
Foraged from apples in the Carp and Corkery area this cider uses the yeast from our own backyard to produce a truly traditional, authentic cider. Aged in oak barrels for 5 months this cider exudes notes of soft oak, rich green apple character and a unique wild character. You don't get any more local then All Together.
Vulture
Born from a love hate relationship with a neighboring turkey vulture we have created a cider just as intense and temperamental as our perched foe. 50% barrel aged crap apple cider blended with mature russet apples to provide a rich, tannic cider with a strong backbone of acidity. Careful with this one
Last Call
It's last call, better make it a good one. We have launched a cocktail inspired cider series and couldn't be happier with the result.
Volume one - Raspberry Honey Sparkling Cider, inspired from a cocktail called the Clover Club, sipped in a underground bar in Florence.
Volume two - Cherry Bourbon Still Cider, inspired from a cherry old fashioned sipped in Kelowna BC.
Farm Fresh Food & Cider Pairing
We get alot of questions about ways to use our fresh vegetables and the honest answer is they are always best just as they are!
If you are looking for a fun way to step up your culinary game try this recipe provided by our cidermaker, Wes Hunter, below:
Oma's Rhubarb Pie paired with Last Call Sparkling Raspberry Honey Cider
Ingredients:
Pre-made pie crust for 1 pie (top and bottom)
3 cups Rhubarb chopped into 1/2 “ pieces
8 white premium plus crackers
½ cup white raisins
1 cup sugar
2 eggs
Instructions:
Preheat oven to 375 C
Roll out half of pie crust and place in bottom of pie pan.
Use a rolling pin to crush crackers into small pieces (oatmeal size) and mix with rhubarb.
Now add white raisins and sugar and mix
Wisk eggs and add to rhubarb mixture and mix
Spoon rhubarb mixture into pie shell evenly
Oma always makes a lattice top on her rhubarb pie.
Place on lowest rack in oven and bake at 375 for 10 min. and then turn oven to 350 and bake for another 40-45 min. Check that it is golden brown and juices are bubbling.
