Cidery Construction Update

We have started construction this week on the 1818 Farm and Cidery building!
It will be a three season building that will house the cidery production area, the farm store, a kitchen, bar area and open seating. We see this building as a place where we can continue showcasing 1818 Cider and organically grown vegetables while providing a space for our community to come together. The food served will be fresh, local and simple in it’s approach.

With 22 years dedicated to the hospitality industry, Wes is equipped to provide our guests with an experience that elevates the standard of cider-making and hospitality. With a background in wine production, he aims to express the varietal characteristics of the land and in turn, produce ciders that are a celebration of both the fruit and our farmland.

Natural Fermentation: The Way Nature Intended
We believe in an honest approach to cider-making, as nature intends, and for us, that looks like using a natural fermentation process. In an age of mass production, synthetic flavors, and assembly lines, we’re choosing to slow down and do things the time-tested way. Is it more work? Yes. Is it worth it? Absolutely. Using natural fermentation preserves the unique traits and tasting notes that our land and apples come to bear, all while eschewing any improper techniques that may manipulate that which nature has already made perfect.

Our commitment to crafting excellent ciders is found in our methods at every stage: from caring for our heritage trees and new growth orchard, to ensuring adherence to chemical and pesticide-free practices, to harvesting with care, by hand, to pouring over our ciders with a wine-makers level of mastery and craft, our approach to cider-making is a tribute of our land and it’s bounty.
